With Mother’s Day right around the corner, it’s time to start planning for that grand tradition: Mom’s Breakfast in Bed. There’s no need to get fussy. The woman who subsists off her kids’ uneaten scraps, wolfed down over the kitchen sink in probably not too picky. Anything will do. Cereal is fine. PB&J is also good.
But think about the special things mom makes you. She’d probably like you to make that for her.
Last weekend, I made some waffles for the clan, and brought out fruit, chocolate chips, coconut, M&Ms and other things for everyone to decide how they wanted to customize their breakfast. It was great fun to see what the different personalities in my house decided upon for this fun breakfast.
Homemade DIY Waffles (about 10 waffles)
2 cups flour (I used half white and half wheat)
4 tbsp sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
2 cups lowfat or fat free milk
1 tsp vanilla
4 tbsp melted butter
1. Combine dry ingredients.
2. Add eggs and stir well
3. Add vanilla to the milk, and add to the dry ingredients. I use a whisk so I can make the batter as lump free as possible.
4. Stir in the butter last.
You’re going to have to follow the directions on your waffle maker to do the actually cooking. But here’s how I did the DIY part. I got a 1 cup liquid measuring cup and added about 1/3 cup of the requested additional ingredients and scooped some batter over that. Then I mixed everything together and poured the batter into the waffle maker.
Here are some ideas for things to add to your waffles:
- White Chocolate
- M&Ms (the coating melted and made swirls of color! Fun!)
- Whole Oats and flax
