First, apologies to authentic Italian cooks. This soup is my version of Pasta Y Fagioli, an Italian Tomato soup with ham and white beans, served over pasta. We love this soup! And with our long day out of the house yesterday, it was truly delightful to come home to the aroma of this soup waiting for us in the slow cooker. It’s hearty and can be made to suit all dietary needs, depending on which ingredients you include.
Fast and Easy Pasta Y Fagioli
1 quart broth – I used chicken
6 oz can of tomato paste
2-3 cups pureed tomatoes
8 oz diced ham or pancetta – I used pancetta
1 can white beans – you can add more if you want a heartier soup
salt and pepper
8 oz prepared ditalini pasta
1. Put everything but the pasta in a slow cooker.
2. Cook on low for 6-8 hours.
3. Serve over the pasta.
It took me about five minutes to throw this all in the slow cooker. The pasta took 8 minutes to cook when we got home. That’s it! Thirteen minutes of effort.
As I said, you can alter this to your dietary needs. You can use vegetable broth and skip the ham for a vegan version of this soup. We often top this with cheese, but if you want it dairy-free, you can skip that. And I passed on the pasta in mine. That would make it gluten free! if you’re making this for a crowd, you might actually find it easiest to make this as a simple tomato soup with the seasonings and have the add-ins on the side for people to include according to their own taste. As you can see, I had mine with a grilled cheese sandwich. I used a hard crusted Italian bread with bacon and provolone. I dipped. It’s a crime not too!
