Homemade Chai Tea

hctMy faithful assistant is sick AND it’s his birthday! Poor little guy! Asthma, cold. Blech. He’s coughing and wheezing and it’s hard to get him to drink anything warm. He doesn’t like tea except for Chai Tea. Well, with all the slop on the roads, I certainly was not going to run to Starbucks to get him one. But, I could certainly make him one!

There are lots of recipes for Chai Tea online. They call for a wide variety of spices, including many things I don’t have, like cardamon, and other things I wouldn’t want in my tea, like fennel seed.

Homemade Chai Tea
6 cups water
3 or more tea bags of choice – I used green tea
1 1/2 – 2 tsp vanilla
1 tsp cinnamon
1 tsp ginger
1/2 tsp cloves
1/2 tsp all spice
1/4 tsp black pepper
Sugar and milk as desired

1. Combine everything but the milk and sugar in a sauce pan.
2. Cook on medium high for 10 minutes.
3. Serve in your favorite dainty tea cup or manly mug with milk and sugar according to your taste.

I read that ginger, cinnamon and cloves are natural expectorants. Who knows if that’s true or not? I do know that my faithful assistant drank his tea. He said it was the best he ever had and at the ripe old age of twelve, he’s had quite a few cups of chai! And there’s plenty more for him to enjoy until he feels better!

He did not have his Chai in the dainty little floral cup. I believe he used the rainbow mug he got for his birthday last year from his brother. And he is currently drinking the iced version from a red solo cup. Pretty fancy!

Feel free to play around with the spices you use, and the quantities of them.
