I have been trying to come up with a recipe that uses veggies and chocolate. I’ve tried avocado but I wasn’t a fan. Plus avocados are not a veggie that are easy to keep in a ready to use state in your house. Chocolate Zucchini Smoothie
1/2 cup nonfat plain or vanilla yogurt
1/4 cup water
1 zucchini, peeled and chopped or shredded, depending upon what your blender can handle
1/2 scoop chocolate whey powder
1-2 TBSP cocoa powder
Dash each of vanilla and cinnamon
1 tsp sugar
5-6 ice cubes
1. Place the ingredients in your blender in the order listed.
2. Start blending on low and slowly increase the speed to high.
3. Drink up!
I enjoyed the chocolatey smoothness of my creation. I don’t like terribly sweet sweets but even I needed some sugar in this, so I definitely won’t judge if you need more than one teaspoon in yours.
I had enough for two servings. If you’re only making for yourself, just use less zucchini. Based on my cursory research, zucchini is a good source of potassium, vitamin C and vitamin B6. And an added bonus is that they do work very nicely with chocolate.
If you’re revitalizing your diet by adding more veggies and removing some fat, this is a great addition. It’s so smooth and creamy, you’ll think you’re having a milkshake. I hope you’ll give it a try!
