Mom Cave Chili

mccMy idea of the perfect afternoon is putting on a movie where nothing explodes, pouring myself a nice glass of red wine and grabbing some really good chocolate and heading off to my Mom Cave.  I’m sure many of you feel the same way. The recent cold weather gave me a few opportunities to slink off to my Mom Cave and enjoy my (not) guilty pleasures.

When thinking about a new version of chili to prepare, I thought that red wine and chocolate combined with freshly ground sirloin, dark red kidney beans and black beans would make some pretty remarkable chili. If you close your eyes and think about it, you can probably smell it. So, I bring you…

Mom Cave Chili
1 1/2 – 2 lbs ground sirloin (if you can, grind it yourself)
2 cans each dark red kidney beans and black beans (15.5 oz cans)
1/2 onion, chopped
Crushed garlic
3 heaping TBSP cocoa powder
1 cup or more red wine (I used a Shiraz)
1 small can of tomato paste

1. Brown the ground sirloin with the onion.
2. Combine with everything else in a slow cooker.
3. Cook on low for 5-6 hours.

I served my chili topped with grated parmesan and romano cheese and chopped green onions. I thought it was delightful. It had a very rich flavor and was extremely aromatic. If you noticed, I didn’t indicate how much of the spices to add. Please use your own taste buds as your guide. If I had to guess, I would say I used 3 cloves of garlic, 1/2 tsp of cumin and 1/4 tsp of cayenne. The consensus was I could have gone with a little more cayenne. I didn’t agree. I was going for a chili with a different taste and not one that was going to leave everyone crying in pain. I liked that you could really enjoy all the flavors of the meat, beans, chocolate and wine without being overwhelmed by stronger spices.

Is it early to plan for Valentine’s Day? I don’t think so! I hope you’ll add this to the list of things you will make for your honey. Or maybe you can get your honey to make it for you!
