Vanilla Cheesecake with Clementine Curd

vcccMost of my recipes are pretty simple and take very little time to make. But every once in a while, I get an urge to try something crazy. This weekend, I felt the need to make Clementine Curd. Why? I have no idea. I’ve never bought any type of curd at all. This is a great mystery of life that may never be solved. I found a recipe for Clementine Curd on Willow Bird Baking.  Julie has a very lovely site with a lot of very good recipes. I hope you’ll check it out. I followed her recipe for Clementine Curd to the letter. Follow the link to get to the recipe. It wasn’t hard at all, but requires a bit of patience.

 

Vanilla Cheesecake
2 packages of low fat cream cheese at room temperature
2 eggs
1/3 cup sugar
1 tsp vanilla
1 prepared crust of your choice

1. Combine all the ingredients and mix until nice and smooth.
2. Pour into prepared crust (I used an Oreo Cookie Crust).
3. Bake at 350 for 40 minutes or until the center is set.
4. Cool and refrigerate.
5. Top with the Clementine Curd.

I got a little crazy and dipped some clementine sections in white candy melt. I think it looks pretty nice! I also added just a dash of orange extract to the cheesecake batter.

Cheesecake is a big hit in our house but it’s always a bit frustrating because it’s not something you can take out of the oven and eat right away. It has to cool. Warm cheesecake. Yuck.

If the idea of curd doesn’t appeal to you, you can top your cheesecake with something else like chocolate or caramel sauce or even a fruit sauce. It’s easy to be creative with something like this.
