Gingered Sweet Potato Soup

gspsI’ve had a few items in my pantry staring me in the face for the past few weeks, begging me to turn them into a lovely smooth soup. Does that ever happen to you? The cans and boxes call to you. “Pick me! I’m so good!” Well that’s what I heard from a can of light coconut milk, yams and Wegman’s Thai Culinary Stock. This is another ridiculously easy soup to make that is sure to be a hit with everyone in your house.

Gingered Sweet Potato Soup
Two cups Wegman’s Thai Culinary Stock
Two cups cooked sweet potatoes (feel free to use canned yams without the syrup)
One cup light coconut milk
One tbsp fresh ginger

1. Put everything in a blender.
2. Blend until smooth.
3. Heat.
4. Serve.

If you don’t have a Wegman’s in your neighborhood, Swanson’s makes a Thai Ginger Broth that I’m sure will be just fine in this. Or you can add some white wine, ginger and lemon grass to veggie stock and make your own. If you want to spice this up, feel free to add some cayenne pepper to it. I was looking for something on the mild side so I let the ginger provide the flavor. You can also add some sautéed chicken to this to make it a little more hearty.

The snow is falling here in Central Maryland. This soup has some great slightly exotic flavors to chase the cold away in no time flat.
