I’m feeling pretty good about my Green Smoothie obsession. My family is enjoying them which is great! And I’m feeling even better that I have gotten several of my co-workers to add a little green to their own smoothies. It’s like my own tiny revolution! Yay!
I have mentioned my vegan nephew before. I like to post something for him once in a while to make sure he’s trying a variety of food. This one is for him, too.
Vegan Tropical Green Smoothie
1 cup almond milk
Big handful of baby spinach
1 cup frozen peaches or frozen tropical fruit
2 tbsps of shredded coconut
1. Place the ingredients in your blender in the order listed.
2. Start blending on low and slowly increase speed until your smoothie gets to your preferred consistency.
3. Drink up!
I loved having the flavor of coconut in my smoothie. The weather has improved significantly and the snow has melted but it still isn’t spring. When I drink this, I can imagine warm winds and sandy beaches. So nice.
This smoothie can be made with yogurt or soy milk. If you’re using yogurt, you’ll need to add a bit of water. And if you want a little extra protein, you can add some vegan whey protein or just the regular kind.
