Chilled Green Bean Soup

cgbsThe other day, I came across a recipe for Chilled Radish Soup. I wish I could tell you where, but I didn’t save it so I don’t know. It sounded interesting.

The writer mentioned they got the idea from Green Bean Soup. Hmm… That sounded like something I could try. Green beans are flooding stores and gardens now. I decided to give it a whirl.

Chilled Green Bean Soup
2 cups green bean prepared by washing and breaking the ends off
2 cups broth of choice
onion – I used 3 green onions
salt and pepper
1 cup buttermilk

1. Combine everything but the buttermilk in a sauce pan and cook until the beans are soft. You can microwave, too
2. Transfer to a blender, add buttermilk and blend until smooth.

There you go! Another super easy, healthy lunch or dinner option for you. As you can see in the picture, I have it ready to go for my lunch today.
