We don’t eat a ton of pork. The Spouse doesn’t love it for some reason, though he loves ribs and bacon. It’s a mystery of life. But The Spouse is away for a few days which gives me a chance to experiment with a food we don’t get to have often.
People make quite a hubbub over Pulled Pork. I am not a big barbecue fan. I find it to be very heavy. But the boys love it and I love tacos. So I came up with a recipe Pulled Pork Tacos, and there is plenty of Pulled Pork for them to use for lunch all week long!
Pulled Pork Tacos
Pork shoulder – mine was 6 lbs
1 onion, chopped coarsely
3 crushed garlic cloves
1 cup salsa
Salt and pepper
1. Place the pork shoulder in a slow cooker on high.
2. Put the other ingredients in around it with the salt and pepper on top of it.
3. Cook on high for 6 hours. The meat should be tender enough that it pulls apart easily with just a fork.
4. Serve with your favorite taco fixings!
My first attempt at making Pulled Pork was a hit! The boys seemed to really enjoy it. So did I! I don’t think I would change a thing about this recipe.
If you don’t have a slow cooker large enough for a pork shoulder, you can cook this in the oven. Cook it at 300 for 6 hours. The temperature of the meat should be 160 when done.
It’s a little cool today in Central Maryland, and it’s supposed to stay cooler than normal all week. It’s not quite “fall-like weather” but I can pretend it is. I’m looking forward to finding some clever ways to serve up my “fall-like” food this week.
