Practically Instant, Homemade Broccoli Soup (2 servings)
1/2 of a 1 lb bag of frozen broccoli
2 cups broth of choice
1. Combine the broccoli and broth in a microwave safe container and microwave for 10 minutes on high until the broccoli is soft.
2. Allow the everything to cool for a few minutes and carefully transfer to a blender. Blend until smooth.
We put a little parmesan in our soup. You could also add some chopped chicken or some cheddar cheese after you blend it. Wondering where all the seasoning is? I use Wegman’s Chicken Stock. It’s quite flavorful so I don’t really need to add anything else. If you don’t have Wegman’s nearby, and have to use some less flavorful broth, you can add a little onion or garlic. You could also add some Italian seasoning or even a little pesto. So many possibilities!
And speaking of possibilities, if you want to use something other than broccoli, you can use cauliflower or a combination of the two.
