Caprese Flatbread

cfbDo you clip coupons? I do. I don’t usually find a ton for things that I buy, but the $10-$12 I save a week can really add up. In the past couple weeks, there was a coupon for Krusteaz Flatbread. The first store I checked didn’t have it but I scored at the next one. I bought two boxes.

I have no fear of baking bread. I actually do it quite well. But this mix sounded very good. And with the coupon, I ended up paying only  $.70 for each box.  And this is the kind of baking that I can get into. The flatbread was a blank canvas for me to use to create whatever I wanted. I was in a Caprese mood so I picked up some campari tomatoes, basil leaves and mozzarella pearls and made some delightful…

Caprese Flatbread
1 box Krusteaz Italian Herb Flatbread Mix
Olive oil
8 campari tomatoes, sliced
5-6 leaves of fresh basil, chopped
1/2 cup fresh mozzarella pearls

1. Prepare the flatbread according to the instructions on the box. You can make it whatever shape you like. I chose to make two, 5″ x 14″ ovals.
2. Bake for 15 minutes at 425.
3. Remove from the oven and brush with olive oil. Then top with tomatoes, basil and mozzarella.
4. Bake for another 10 minutes.

In an ideal world, this would be served warm. It was for someone who helped himself before asking if it was for the company we are expecting later today. Oh well. I guess it’s a compliment that it looked so good that he couldn’t wait.

The Krusteaz site has a ton of recipes for this mix and all their other mixes, too. I’m pretty excited to use my second box and I may even buy this again even if I don’t have a coupon!
