Raspberry Refresher

rrWe are headed into the home stretch. The Teenager will soon be the Graduate and in just three months he will head to college. It’s a very exciting time for him. And very busy! All his activities have kept us all running hard. This week will be relatively calm. We have family who were here for a concert leaving, and more family arriving for graduation.

Somehow, we found time (with the help of my Faithful Assistant) to make a refreshing beverage to energize us!

Raspberry Refresher
1/4 raspberries, slightly crushed
1 tsp of sugar – use more or less according to your taste
1 cup (about) of sparkling water – we used Dasani Berry Flavor

1. Crush the berries in the bottom of a 12 ounce glass.
2. Add sugar and stir.
3. Add sparkling water and ice.

This is great fun for kids to make by themselves. It’s also been a great way to distract my Faithful Assistant from other more sugary beverages that he really loves, particularly the ones that come in 20 oz. bottles and have his friend’s names on them. (Blast you, clever Coca Cola marketing team!)

It’s Memorial Day. While you’re enjoying barbecues and time with friends, I hope you will take a moment to remember those who have served our country and paid the ultimate price. Raise your glass to them and to the families who feel their absence, and say thanks.


Mango Cashew Chicken Salad

mccsSuper easy and colorful way to serve chicken salad. Every supermarket that sells roast chicken probably sells chicken salad. My favorite comes from Costco. We don’t get it too often so when we do it’s a treat. (Chicken salad is a treat?)

I had a very busy day yesterday. I had my nephews over for brunch and then I had to go to help at church. No time for their favorite Cheeseburger Pizza. I popped off to the store in the morning and grabbed some grapes, mango, blueberries and cashews and mixed them into the chicken salad. The results were mind-blowing. Adding the fresh fruit with all the colors made it a very lovely dish. It’s a perfect spring brunch recipe and would be wonderful for Mother’s Day next week. Here’s roughly how I made it. I didn’t measure anything so what I have is my best guess at quantities.

Mango Cashew Chicken Salad
1 mango, peeled and chopped in small cubes
1 cup of grapes, washed and cut in half
1 cup blueberries, washed
2 cups of chicken salad
1 cup of cashews

Mix it all together and serve well chillled.
