Sangria Smoothie

I made this not quite a year ago but, as My Faithful Assistant enters his last week of 7th grade, and I hear from friends the true horrors of their kids’ final days of school, it seemed appropriate to repost right now.

The school year ended and the summer schedule started. Just like that. There was no blissful calm week in between the two. BAM!!! Right there. Ugh.

I have had no time for anything as I have been coordinating my kids’ schedules and carpools. I believe our routine is set now until the end of July. Time to celebrate with a delicious adult beverage.

Sangria Smoothie (2 servings)
1 cup red wine
1 1/2 cups of frozen mixed berries

1. Blend until smooth and sit back and savor the flavors.

Shrimp, Mango, and Avocado Lettuce Wraps

Here’s a healthy summer recipe for you to enjoy.

Shrimp, Mango, and Avocado Lettuce Wraps
1 lb shrimp, sauteed with garlic and olive oil, chopped and chilled
1 mango, peeled and chopped
1 avocado, peeled and chopped
2 chopped green onions
Lettuce leaves for wrapping

1. Combine all the ingredients except the lettuce.
2. Spoon into lettuce leaves.
3. Serve.

This was so delicious! I could have eaten the entire thing myself. It was sweet from the mango and creamy from the avocado. There was a little bit of zing from the onions. Perfect flavor medley!
