I’ve been a very busy gal. I spent most of my free time in the past few months studying for a certification for work. It was dull stuff, and difficult too! But I managed to pass my exam. I can add an acronym to my email signature at work and go on with my life.
It’s not that I haven’t been cooking. I just haven’t had a lot of time to record what I’ve made. But today I do! What better way for this Marylander to get back to blogging than with a beloved Maryland classic.
Maryland Crab Soup
1 chopped onion
3 carrots, sliced
2 stalks of celery, sliced
1-28 oz can of chopped tomatoes
1 quart beef broth
1 cup frozen corn
1 cup frozen chopped green beans
1 lb crab meat of your choice
2 TBSP Old Bay seasoning
Dash of cayenne pepper
- Saute the onion, carrots, and celery in a little olive oil until the onion is translucent..
- Add the Old Bay and stir in thoroughly.
- Combine the rest of the ingredients and cook for 2-3 hours.
I made this soup early this morning for a sick friend. I am happy to report that after one serving, she is feeling better! I know it’s a coincidence. Or is it? Maybe this soup is magic! You’ll never know until you make some for yourself!
