Fish “Muffins”


fmCostco was giving out beautiful recipes cookbooks last week. We were fortunate enough to get one. It was stuffed with some excellent recipe ideas. I’m looking forward to trying many of them and sharing them with you here.

The first recipe that caught my eye was a recipe for Tilapia baked in a muffin tin, stuffed with creamed spinach.  It sounded good to me but the aversion to spinach is very strong for one member of my household. I decided if I was going to make any fish this way, I would have to modify the stuffing. I decided to go with rice with some chopped broccoli and onion.

Fish “Muffins”
6 tilapia filets, cut in thin strips
I cup rice, prepared according to the package directions to yield three cups cooked rice
2 cups chopped broccoli
1/2 chopped red onion
1/3 cup or more broth
1/3 cup cheese

1. Combine the prepared rice with the veggies, broth and cheese.
2. Spray a muffin tin with cooking spray. Line the cups with a slice of fish so it’s around the outside edge of the cup.3. Spoon some of the rice mixture into each muffin cup.
4. Bake at 375 for 25-30 minutes until the fish is done.

In spite of my efforts to stuff the “muffins” with something more pleasing to the spinach hater, he still refused to eat these. But my faithful assistant loved them so much that he took them for lunch two days in a row.

I can think of so many ways to make these. I’m really looking forward to trying them again. I may even use my Crab Cakes a la Paula as a stuffing!

If you prefer to use something other than rice, you can use quinoa or just some chopped vegetables. You’ll need to add something to the vegetables to keep them together. Maybe some breadcrumbs with the cheese. This is another recipe that has endless possibilities.
