Mocha Frappe

mfSometimes, a gal just wants a little treat. Something smooth and creamy. Maybe a little chocolate and a little caffeine for a boost of energy. And cool. Cool is a must. These were the thoughts going through my head late last Saturday afternoon. I was able to satisfy my need for a treat with a very easy, lowfat Mocha Frappe.

Mocha Frappe
1 cup almond milk (use soy or regular milk if you prefer)
1 TBSP coffee syrup
1 TBSP chocolate syrup
4-5 pieces of Ice

1. Combine everything but the ice in a blender and mix.
2. Add the ice and blend until you reach the desired consistency.
3. Find a nice spot on the patio away from children and noise and drink up!

Now I realize that coffee syrup is not something most people have on hand. I do because my wonderful friend Jen brought me some. I had no idea but Coffee Milk is a big treat in Rhode Island. When she and her family came to visit a few weeks ago, they brought me some. It is great with milk but even better with milk, and chocolate syrup in this tasty treat.

If you don’t have coffee syrup on hand, you can buy it from Amazon. Or you can just add a little coffee or a shot of espresso.

Raspberry Almond Smoothie

rasIf the roof comes off my house in the next few weeks, it’s probably because my kids have had a growth spurt and gone right through it. They are eating A LOT. Last week, we went through at least three pounds of bananas, two pounds of apples, four loaves of bread and a gallon and a half of milk. ┬áNot a lot left for breakfast. Fortunately, the almond milk isn’t on their radar and somehow, they missed the raspberries, so I was able to scrounge those two measly ingredients for this smoothie.

Raspberry Almond Smoothie
1 cup almond milk
A handful of fresh raspberries (1/2 cup?)
5-6 pieces of ice

1. Place the ingredients in the blender in the order listed.
2. Begin blending on low and slowly increase speed to high.
3. Drink up!

You could throw some shredded coconut in here, or a dash of vanilla. Raspberries are not terribly sweet so you may want to add a little sweetener. I thought this was delicious. Even though I had my heart set on a different kind of smoothie, I was very happy with this one. I hope you like it too.

Make Me Whole Again: Apple, Honey and Ginger Smoothie

ahgsYou know how you get that alert that you’re getting a cold? Your throat gets scratchy and you feel a little tired? And if you’re really lucky, you can fend it off with your favorite home remedy?

I wasn’t so lucky this time. I was knocked on my rear end Wednesday night by the most miserable bug I think I’ve ever had. I’m tired and achy and congested. I needed something loaded with health to knock this bug out, and I think I found it in my newest smoothie creation.

Apple, Honey and Ginger Smoothie
1/2 granny smith apple
2 tbsp honey
1 tsp freshly grated ginger
1 cup almond milk
5-6 pieces of ice

1. Place ingredients in your blender in the order listed.
2. Begin on low and slowly increase speed to high until you reach the desired consistency.
3. Pour it in a container that is bed-proof and go back into hibernation.

This smoothie was so delicious. The fresh ginger bit right through my severe congestion and immediately soothed my throat. And the combination of the almond milk and the apple! Wow! Just wow!

Instead of honey and ginger, I used 2 tbsp of Honey Ginger Tea that I get at the local Asian market. If you have one close by, I highly recommend this concoction. It’s great by itself in hot water, or as an addition to your favorite tea.

If you don’t like almond milk, you can use yogurt and water, regular milk, or soy milk.

Vegan Tropical Green Smoothie

vgsI’m feeling pretty good about my Green Smoothie obsession. My family is enjoying them which is great! And I’m feeling even better that I have gotten several of my co-workers to add a little green to their own smoothies. It’s like my own tiny revolution! Yay!

I have mentioned my vegan nephew before. I like to post something for him once in a while to make sure he’s trying a variety of food. This one is for him, too.


Vegan Tropical Green Smoothie

1 cup almond milk
Big handful of baby spinach
1 cup frozen peaches or frozen tropical fruit
2 tbsps of shredded coconut

1. Place the ingredients in your blender in the order listed.
2. Start blending on low and slowly increase speed until your smoothie gets to your preferred consistency.
3. Drink up!

I loved having the flavor of coconut in my smoothie. The weather has improved significantly and the snow has melted but it still isn’t spring. When I drink this, I can imagine warm winds and sandy beaches. So nice.

This smoothie can be made with yogurt or soy milk. If you’re using yogurt, you’ll need to add a bit of water. And if you want a little extra protein, you can add some vegan whey protein or just the regular kind.

Orange Coconut Almond Smoothie

ocaWell here we are again getting ready to face another winter storm. Seriously. Enough winter. I’m tired of the obligatory trip to the store for TPMB (toilet paper, milk and bread). Today, I added a couple items to the cart to use to make some springy food. And I’m very excited that I will soon be featuring a post from a guest blogger who will be making a lovely dessert using three ingredients of my choosing that will be great for Easter or Passover.

To give myself some energy to face the pending storm, I made a fantastic vegan smoothie. I think you’ll like it!


Orange Coconut Almond Smoothie

1 orange, peeled and sectioned
1/2 Goya Light Coconut Milk
1 handful of almonds (1/2 cup?)
5-6 pieces of ice

1. Put the ingredients in your blender in the order listed.
2. Blend until smooth.

This would be great with any fruit. You could add a bunch of other things to it, too, like oats, flax seed, whey protein. You get it. Word of warning. This is not sweet at all. It has a very nutty flavor. If you need to add some sweetener, I won’t tell anyone.
